Okra or Bamya/Bamia Soup recipe in Uganda is like ingredients for the soup served in the Middle East.


Ingredients are as follows:


• 2 tablespoons olive oil


• 1 onion, diced

• 2 cloves garlic, minced

• 2 cups okra, sliced

• 2 tomatoes, diced

• 2 cups beef or lamb stock

• 1 teaspoon ground cumin

• 1 teaspoon ground coriander

• 1 teaspoon paprika

• 1 teaspoon Maggi spices

• Salt and pepper to taste


Cooking Instructions:


1. Heat the olive oil in a large pot over medium heat.


2. Add the onion and garlic and cook until softened, about 5 minutes.


3. Add the okra and tomatoes and cook for another 5 minutes.


4. Add the beef or lamb stock, cumin, coriander, paprika, and Maggi spices.


5. Bring to a boil, reduce heat to low, and simmer for 20 minutes.


6. Season with salt and pepper to taste.


7. Serve with rice or flatbread. Enjoy!
